Avocado Pea Purè

This Avocado Pea Purè is a great and versatile dish that can be used either as a side-dish, to spread on top of your sandwich, to dip vegetables, or any other way your belly tells you. It takes only ten minutes to make and is therefore great if you need to make something nice and tasty last minute. You can experiment with spices and ingredients. A good base is to have the same amount avocado and green peas, a bit of olive oil, some lime juice and salt & pepper. The version I made has a asian feeling with Thai Basil and tasted very nice on top of the home made Flax Seed Crackers (recipe on the blog), with some slices of tomato and a dash of olive oil.


1 Avocado
1 cup cooked Green Peas
Juice of one Lime
1-2 tablespoons chopped Leek/Onion
a small bunch Thai Basil (optional)
a small pinch Cayenne powder
Salt & Pepper

Place all ingredients in a blender and mix until smooth and creamy.

You may place it in the fridge for an hour or two before serving to allow the flavours to blend and the purè to thicken.
