I am a travelling Vegan Chef and Yoga Teacher. I live mostly between Bali and Norway. My Food Philosophy is expanding along with my inner growth. My newest healthy addiction is Rocket Pesto. As I am not eating cheese, I try to find substitutes that satisfy my craving for cheese. Rocket salad contains lots of iron and mixed  with nutritional yeast, which contains B12, you've covered some of your iron and B12 needs. This pesto can spice up any savory dish that needs more flavor; on top of a sandwich together with some veggies, with pasta, in salad, on top of pizza or in a soup. I chose to put it on top of a lentil, tomato & spinach salad, which is quick, filling and tastes delicious!

Ingredients
300 gram Rocket salad
1 cup Olive oil
1 cup Pumpkin seeds
3 tablespoons Nutritional Yeast
A squeeze of Lime
1 teaspoon Salt
A pinch of Black Pepper

Splendidly blend together with a hand-mixer or blender.

The pesto keeps in the fridge for up to ten days, just make sure to cover the top with a bit of oil.
