Sun-dried Tomato Pesto
Since I am traveling a lot, I get the chance to try the best ingredients of each country. I have been living in Italy for a few months now, spoiling myself with olives, sun-dried tomatoes, fresh tomatoes, delicious olive oil and other ingredients from the wonderful Italian Kitchen.
Pesto can turn any plain meal into a delicious and tasteful experience. Having it stacked up in your fridge, saves you time when you are on the go and need to cook something quickly. Mix it into a rice dish or pasta, on top of your beans, or spread it on a sandwich.
As that it is getting cooler outside, I feel the need of eating nourishing and warm meals, plus more protein based food. Warming and filling food gives me a sense of being grounded and I notice how I need the energy from proteins to keep my body warm.
200 grams sun-dried tomatoes
1 cup sunflower seeds
1 cup olive oil
one handful fresh basil
3 tablespoons Nutritional Yeast
1/2 clove garlic
a squeeze of lime juice
salt & pepper
Place all ingredients in a blender, or use a hand-mixer, to finely blend the pesto.
If you keep the pesto in a air tight container, it can last for a while in the fridge.
