Hi.

I am a travelling Vegan Chef and Yoga Teacher. I live mostly between Bali and Norway. My Food Philosophy is expanding along with my inner growth. I am seeing an important connection between both the physical and emotional bodies to be healthy through nutrition. Emotional nourishment through food plays such an important role in ones wellbeing.

My kitchen is filled with new ingredients! I arrived to India a few weeks ago and I've had the chance to Sun bathe, swim and enjoy Mother India. I love to cook here. There are so many wonderful fruits, vegetables and different ingredients to cook with. For some reason, food is incredibly tasty in India. It's as if the gods have blessed the food with so much flavour, or maybe its just my continuos love affair with India. I keep falling in love with her every time I am here.

The other day I was surprised to find fresh figs at the fruit market. I added some pomegranate and soft dates to the basket. This turned into a creamy, crunchy and flavorful ice cream.

Ingredients Ice cream
200 ml Coconut Milk
2 Bananas
3 Figs
7 Dates (soaked in hot water for 10 minutes)
1/5 teaspoon Vanilla seeds
1/2 Pomegranate & 2 Figs for decoration

Blend all the ingredients together in a mixer. When it's all nice and creamy, add the pomegranate seeds and fold them into the cream. Place in the fridge for three-four hours.

Ingredients Honey-Tahini Caramel
3 tablespoons Tahini
1 tablespoon Honey
1/2 teaspoon Cinnamon
1 teaspoon Water

Mix together the caramel and pour over the Ice cream. Decorate with figs and pomegranate seeds, before to serve.
