Raw Chocolate Tart with a taste of Lemon

Smooth, soft, dark, rich and so tasty!
I just started testing out Raw Chocolate Tarts and this recipe came from a friend of mine in Bali. It's very rich and full of flavour and a small piece is enough. I served this to a big group of yogis and everyone loved it.

The cake on the above picture is made with the original recipe. The below picture is double recipe and decorated with orange peels.


Ingredients

Crust
1 cup raw cashew nuts (soaked over night) 
1 cup coconut flakes
1,5 tablespoons raw cacao powder
1 orange, juiced + the rind
8 dates (soaked in hot water for 20 min and deseeded)
1 cup extra virgin cold-pressed coconut oil
a pinch of salt

1) Place cashew nuts, orange juice + rind, dates, coconut oil, cacao powder  and salt in a mixer and blend until smooth. If it's too dry, add a few spoons of water, but I like the crust to be a bit chunky. Place the mixture in a bowl, add coconut flakes and mix using a spatula or your own hands
2) Place the dough into a cake shape (bottom covered with paper, and sides greased with coconut oil), and press down using your fingers

Filling
1 cup cacao butter
1/2 cup extra virgin cold pressed coconut oil
15 dates (soaked in hot water for 20 min and deseeded)
1/2 cup orange juice
1 orange, juiced + the rind
2 cups cashew nuts (soaked over night)
1 cup raw cacao powder
1/2 cup liquid sweetener
1/3 teaspoon vanilla seeds
a pinch of salt

1) Place all ingredients into a mixer and blend until smooth and creamy. Here also, you may add water/orange juice if it's too thick to blend until creamy
2) Pour the cream over the crust and place into the freezer for about 90 min ++ (depending on how cold your freezer is).
3) Before serving, take the cake out and keep it in room temperatur for about one hour. You can place it in the fridge if you are serving it later.
4) Decorate with cacao powder, lemon/orange rind or what else inspires you!
