Matcha Energy truffles
A lovely combination of Japanese Matcha Green tea and Almonds, softened with a touch of Vanilla. These truffles are energizing and takes only a minute to put together.
Matcha Green tea has become very popular lately and have fallen in love with this Japanese tea. Traditionally the tea requires a special preparation and is considered a high quality tea. Nowadays it is used as an ingredient in cooking as well as drinking, and you can find it in green tea noodles, ice cream and even in raw "cheese" cakes.
2 cups almonds
a handful dates (soaked for minimum 10 minutes in hot water)
1 teaspoon Matcha Green tea
5 tablespoons coconut oil (liquid)
1/4 teaspoon vanilla seeds
a pinch of salt
1) Place all ingredients in a blender and mix. I prefer not blending it until smooth, but rather leave a few chunks for more texture.
2) Roll into ball-shapes or use cookie-shapes and place into the fridge for at least 30 minutes before serving
